As I mentioned in my New Year’s goals post, I am going dairy-free for all of January. I have been nervous about going dairy-free, primarily because I do need things to satisfy my sweet tooth. Typically, those things involve milk chocolate! Luckily, I’ve been able to find some good dairy-free dessert options including these yummy healthy cookies from LuxHippie. These cookies are completely vegan too, in case that appeals to your dietary needs.
I used Enjoy Life dairy-free chocolate chips. They taste great, and just like the real thing! I also recently found out that Trader Joe’s Semi Sweet chocolate chips are dairy-free (and much cheaper than Enjoy Life), but those chips are made with soy. For now I’ll stick with the Enjoy Life brand.
Healthy Peanut Butter Banana Oatmeal Cookies

Ingredients:
3 ripe bananas, mashed
1 tablespoon vanilla
1/2-1 cup natural unsalted peanut butter
4 tablespoons maple syrup
2 cups rolled oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
½ cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees. In a large bowl, mix bananas, vanilla, peanut butter and maple syrup into a creamy consistency. In another bowl, combine oats, flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until they are well combined. The batter should be slightly sticky. Fold in the chocolate chips. The batter will be somewhat runny. Place heaping tablespoon-sized balls of the batter onto a ‘greased’ baking sheet (can also place on wax paper) and cook for 15 minutes. This recipe makes around two dozen cookies.
These cookies absolutely taste like a healthier cookie, but I still think they were delicious. The batter was to die for and I ate a ton of it since there was no uncooked egg in the recipe. Three cookies later and I had gotten my fill of dairy-free sweets!
